Zuchinni Bread

Cooking is not a problem! I do not claim to be an expert, but I can handle the basics. My family eats pretty well and I make most everything from scratch. I don't do boxed or prepared foods. That is unless My sweet tooth Hubby goes shopping and that's all we have in the house. After all he was raised on mac & cheese and hot dogs. Old habits are hard to break. Especially those of the eating variety. But he is learning that all that stuff can kill you. So back to my story. Baking on the other hand, I find very intimidating. Scary even. I am not sure why. But I do. So when my neighbor handed me a huge zucchini I was delighted thinking I 'll make those fritters that Grandma Pam makes for the holidays. Mmmm tasty! Then my Handsome Hubby saw the Zucchini and quickly exclaimed. Mmmm zucchini bread! To which my stomach churned @ the thought of baking. Uggg! I thought. But I really wanted to bless my hubby, so I prayed, then I bit the bullet and made some yesterday. All the while being cheered on by my mom on the phone from Maine. While I griped to her that I was baking and trying to have a good attitude about it. She laughed.
I know I'm ridiculous! Especially since Kevin loved it! He said that I was great @ baking. And the girls gobbled it up too. Lily said I was a good cooker! It really wasn't that hard, I really don't know what I am so afraid of.
And guess where My Handsome Hubby is right now. He's @ the grocery store getting more ingredients so I can make it again tonight. lol
